Authentic Neapolitan pizza dough is incredibly simple, yet extremely difficult to master. Traditional dough uses only a few ingredients:
- Italian 00 flour
- Water
- Salt
- Yeast
What makes the difference is time, technique, and temperature.
Our dough is carefully prepared and fermented to create a light, airy crust with the perfect texture. The result is a pizza that is soft, flavorful, and easy to enjoy without feeling overly heavy.
Unlike many commercial pizzas, authentic Neapolitan dough is never rushed.
High Heat Makes All the Difference
One of the defining features of Neapolitan pizza is the cooking method. Traditional pizzas are cooked in extremely hot wood-fired ovens that can reach temperatures of around 900 degrees.
At Cugino Forno, our ovens are imported from Italy and designed specifically for authentic Neapolitan pizza making. These ovens allow pizzas to cook in approximately 90 seconds.
The fire, stone, airflow, and timing all work together to create the final product.
